Production area

Classic area of Bardolino, county of Bardolino, Lazise, Garda and Cavaion, on the hilly shores of South East Lake Garda. Altitude from 100 to 250 mt.

 

Soil

Gravelly, of morenic origin.

 

Growing technique

Guyot, pergola

 

Vinification

The grapes dry in wood plateau for 40 days en plen air, to elevate the structure and concentrate aromas. Soft pressing of the grapes in mid November. Long fermentation for 14 days at controlled temperature from 18 to 28° C. Bottling after 1 year. Complete Malolactic fermentation.

 

Refinement

6 months in steel and 6 months in wood

 

Organoleptic aspects

Colour: intense ruby red, with purple lights. Bouquet: full and persistent, with hints of ripened fruit. Taste: well bodied and harmonious, with an accentuated concentration of the characters.

13,5% vol.

 

Serving temperature

18-19°C

 

Gastronomical combination

With barbecued meats, roasts and seasoned cheeses.

 

Preservation

Can be aged for 3 years.

   

To produce the DOCG Bardolino Superiore Classico we use the same typical grapes that for the Bardolino, mainly Corvina and Rondinella, cultivated in selected vineyards for the best affering to sun, cultivation and pruning system, limited manuring and irrigation. The best clusters are harvested by hand and remain to dry during six weeks before to be pressed. The fermentation takes a long time, from 10 to 15 days, depend on the year.

In this way It exalts the character and raise the stature of this selection of Bardolino, remarking the taste of the native grape. It is obtained a full red ruby coloured wine, with a strong consistence and a full taste to serve with courses that need an important red wine. It remains to refine in cellar for one year, partly in wood partly in steel, before the bottling.

It supports well an ageing of 3-4 years. To serve at 18-20°C.
