Soil

Soil of morenic origin, argillaceous and rich of limestone.

 

Growing technique

Guyot, pergola

 

Vinification

Soft pressing of the grapes. Long fermentation for 12-14 days at controlled temperature from 23 to 28° C. Complete Malolactic fermentation. Ageing in barriques for 6 monts.

 

Refinement

5 months in steel and 6 months in barrique

 

Organoleptic aspects

Colour: intense ruby red. Bouquet: the well calibrated mellowing in barriques gives smoothness and elegance without covering the primary erbaceous aromas and the feelings of ripened fruit. Taste: mellow and full bodied, with sweet tannins that melt with the tissue of the wine. Spicy character and a long end.

 

Alcohol content

13% vol.

 

Serving temperature

18 - 19 °C , uncork the bottle one hour in advance.

 

Gastronomical combination

With barbecued meats, roasts and seasoned cheeses.

 

Preservation

Can be aged for 3-5 years.

 

   

The ruby color with violet glares gives an immediate sensation of density and force to this important red wine made from grapes Cabernet Sauvignon.

   The spice of barrique, sagely measured, gives softness and elegance without covering the primary aroms of herbaceous and mature fruit.

   It remembers fruit preserved in alcohol on the  palate, with a big sensation of fullness very persistent. It couples with red meat, to barbecue and mature cheeses. To uncork some hours before and to taste in wide goblet, room temperature of 18-20°.
