Vinification

The grapes are allowed to dry gently in well-ventilated rooms for 2-4 months, concentrating their flavours and sweetness. The dried grapes are pressed and fermented in barrique. Fermentation lasts 20 days at temperature from 12 to 20°C. Matures in barriques for five-nine months before bottling.

 

Refinement

5-9 months in barriquel

 

Organoleptic aspects

Color: yellow gold. Bouquet: floral notes and hints of sultanas, sweet spices mixed with the vanilla of the wood. Taste: warm and involving, in perfect equilibrium between the sweet and the fruity notes.

13% vol.

 

Serving temperature

12-14°C

 

Gastronomical combination

Meditation wine, perfect on its own, or at the end of a meal. A lovely partner with cakes and pastries, or blue veined cheeses.

 

Preservation

Can be aged for 5-10 years.

 

   
Obtained from white grapes Cortese and Garganega let to dry in wood cases from mid September to February.
It fermentate at low themperatue direclty in Allier Barrique where it smooths its bouquet until the day of bottling, after one year.
The color is gold yellow, the smell is intense, enriched by the wood, the taste smooth like silk.
It is a wine rich of emotions, truly sun drops to drink. Suitable as a dessert wine, it is wonderful as meditation wine.
