Morenic hills of Custoza, south east of Lake Garda

Soil of morenic origin, with tendency to be sandy and rich of limestone

 

Growing technique

Guyot, pergola

 

Vinification

Soft pressing of the grapes. Short maceration with the skins for 12 hours at 12° C. Fermentation in purity for 7 days at controlled temperature 15-18° C. Preservation in inox tanks until bottling.

 

Refinement

5 months in steel

 

Organoleptic aspects

Colour: light straw-yellow. Bouquet: aromatic, pleasant. Fruit and white flowers aroma. Taste: sapid, mellow, delicate. Lightly natural sparkling.

12% vol.

10-12°C

 

Gastronomical combination

Starters, fish and white meats.

 

Preservation

Drink it young, within 1-2 years.

   
Comes from Garganega, Fernanda, Trebbiano toscano and Malvasia grapes, from vines trained highin the ‘Pergola semplice veronese’ style, on the hills of the risorgimental area of Custoza.

After the grapes have been harvested by hand and soft pressed, vinification takes place at controlled temperature with a partial skin contact to embody the original varietal aromas.

The careful selection of grapes and meticolous vinification result in a fresh and fragrant Bianco di Custoza, distinguished by a pleasant, lively chatacter.
It is perfectly suited to first courses, fish and white meats. It should be served cool and is suggested for drinking while the wine is young.
