Growing technique

Guyot, veronese pergola

 

Vinification

Selection of the grapes that dry in wood plateau for 4 monts en plen air, to elevate the structure and concentrate aromas. Soft pressing of the grapes in February. Long fermentation with maceration for 35 days (of wich 15 at cold) at controlled temperature from 12 to 23° C. Complete Malolactic fermentation.

 

Refinement

24 months in oak wood, 12 months in new barriques, 6 months in bottle

 

Organoleptic aspects

Colour: dark ruby red with purple lights. Bouquet: ethereal, intense whit cherry under spirit and a wide range of sweet spices. Taste: warm and persistent, with a strong structure and smoothness. Velvet tannins.

 

Alcohol content

15% vol.

 

Serving temperature

18-19 °C, uncork the bottle one hour in advance.

 

Gastronomical combination

Meditation wine. Excellent with roasts, grilled meats, game and seasoned cheese.

 

Preservation

Drink it young, within 1-2 years.

 

  
This Amarone is obtained from the selection of good raceme of Corvina, Corvinone and Rondinella of Valpolicella, made to wither for four months on mats.
The long squeezing and the refinement in barrels for 10 months give an important red steal colour with violaceae notes.
In the nose, the black cherry brakes into the spirit and dry plum. At palate, it is hot and persistent, denotes structure and softness counter pointed by a soften tannic.
Good with roasted meat and seasonal cheese. Served at 18 degree in big goblets.

Amarone Valetti is available in two size: the traditional of 0,75 litre and the new one of 0,5 litre, to multiply the occasions to drink this great wine!
